Oven Baked Cubed Steak (Bistecca al Forno)
Ingredients
1 1/2 lbs. cubed beef steak
1 cup plain bread crumbs
2 tablespoons parsley, finely minced
1 teapoon garlic powder
2 tablespoons grated Romano and Parmesan cheese, mixed
1/2 teaspoon salt
1/4 teaspoon black pepper
2 eggs
3 tablespoons olive oil
Cut cubed steak into 3" x 3" pieces. Combine in a pie plate the bread crumbs, parsley, garlic powder and salt and pepper. In another pie plate, mix well beaten eggs and grated cheese. Dip each piece of steak into the egg and cheese mixture, then coat with the bread crumb mixture. Brown both sides in a skillet with the olive oil, and place pieces in a covered baking dish. (More oil may be added as needed) Bake at 350°F for 30 minutes.
Italian Christmas Fig Cookies (Curulela di Fico)
Ingredients
1 cup ground figs
1 cup ground raisins
1 cup mixed nuts, roasted then ground
3 tablespoons water
1/2 cup sugar
1 teaspoon black pepper
2 teaspoons ground cloves
Combine all above ingredients and mix well. Nuts used should be pecans, almonds, hazelnuts, or English walnuts. Mix until soft, adding more water if needed. Let sit for 24 hours, refrigerated.
Cookie Dough:
1/2 cup Crisco
1 cup sugar
2 eggs
2 teaspoons anise extract (or crushed anise seed)
2 1/2 cups flour
1/4 teaspoon baking soda
1/2 teaspoon salt
Mix shortening, sugar, eggs and anise. Measure flour, baking soda and salt. Stir in all remaining ingredients and chill dough. Roll out dougji on slightly floured board. Put a small amount of fig filling on dough about 2" long and the thickness of your little finger, about 1/2" apart leaving room to cut. Also leave 1" down from first fig filling enough to roll up cookie.
Cut apart and form your log. Other shapes are great too, such as a Z or doughnut shape. Cut slits on sides of cookies only 1/2" long. Bake at 375°F for 8 to 10 minutes on an ungreased cookie sheet. Cool.
Make icing with powdered sugar and milk. Make icing thin. Spread on cooled cookie and sprinkle immediately with colored candies.
