This beautiful red sauce is the foundation of many of our traditional Sicilian dishes such as chicken cacciatore, lasagne, eggplant parmesan, chicken parmesan, and bruscialone (stuffed beef rolls). In the old days, it took Mom 3 hours of simmering the prepared tomatoes and spices... now, in 2009 simply open a bottle in your kitchen and enjoy the recipe direct from her cookbook, "The Extraordinary Cuisine of Josephine". The Sugo Basico is a bold and delicious tomato experience... not sweet, not spicy... it is the ultimate blend of crushed tomatoes, tomato paste, oregano, basil, red wine, Romano cheese, garlic, and onion... incredibly simple and incredibly wonderful!!

Caponata Siciliana
(Sicilian Eggplant Antipasto)
This is the first product from Mom's cookbook that I have made available for sale. The blend of sauteed eggplant cubes, red bell peppers, celery, oregano, tomato puree, basil, sugar, capers, red wine vinegar, olives, and fresh parsley is as beautiful as a marriage... at least the first few weeks of a marriage. It is a family favorite and for the last year, I have given away samples at food and wine festivals, grocery stores, and farmer's markets to promote cookbooks and "Girls' Night In" private parties.
Most of the people sampling it wanted to buy the bottle right on the spot... and I had to tell them it was not for sale. Now it is!
Serve the caponata on Italian bread sprinkled with some Romano Cheese (what else??), heated over some pasta, or straight out of the jar.
Caponata was the top selling concession at The Colisseum during the Roman Empire... now, in 2008, you may have it shipped directly to your home.

When you have the opportunity to taste Josephine's Italian cooking, you will no doubt agree that it is truly an incredible culinary experience. Compiling this book was truly a family project as it was written by everyone...my parents, Antonio (deceased April 2002) and Josephine of Sparta, Illinois; my sister Paula Shively of St. Louis, Missouri; my brother Tony who lives in Washington D.C.; and me. The cookbook is a great tribute to the ancestral legacy of the Calandro and Romano families, and I am proudly delivering it to the world with connection, humor, and a large appetite!
Also, there is one important ingredient which was not written down in the recipes; this would be the incredible love with which Josephine cooks. Following her example, we should probably add as much of it as we can.
